Quinoa is naturally gluten-free, high in protein and one of the few plant foods that contain sufficient amounts of all essential amino acids. Quinoa also high in fibre, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants.
Red quinoa (which takes on a brownish hue when cooked) has a richer taste, slightly chewier and heartier texture, and somewhat nuttier flavour compared to white quinoa.
Rinse quinoa in a fine mesh sieve until water runs clear. Transfer quinoa to a medium pot with water. Bring to a boil, then lower heat and simmer, uncovered, until quinoa is tender and a white “tail” appears around each grain, about 15 minutes
